COURGETTES AND FENUGREEK SEEDS

Preparation Method :
- Heat the oil in a large frying pan. Add the onion, green chillies, ginger and garlic to the pan, stir well to combine.
- Add the sliced courgettes and the sliced tomatoes to the pan and stir-fry for 5-7 minutes.
- Add the coriander and fenugreek seeds to the courgette mixture in the pan and stir-fry for about 3-5 minutes.
- Remove the pan from the heat and transfer the courgette and fenugreek mixture to serving dishes. Garnish and serve hot with chapatis.
INGREDIENTS
- 500 grams courgettes, sliced
- 100 grams tomatoes, sliced
- 50 grams onion, finely chopped
- 3-4 green chillies, finely chopped
- 50 ml Cooking oil
- 1 inch fresh ginger root, finely chopped
- 3-4 fresh garlic cloves, crushed
- 2 teaspoon fenugreek seeds
- Chilli powder and salt, to taste
- Fresh coriander leaves
