CHATPATI SUKHI ARBI

Preparation Method :

  • Boil the colocasia in a pressure cooker to give 2 whistles. Remove from heat. After the pressure drops, check colocasia for doneness. If tender, let it cool. Peel.
  • Cut the colocasia into ½ " thick round slices. Sprinkle salt over the colocasia and mix well to coat. With rolling pin crush coriander seeds and cumin seeds roughly.
  • Heat oil in a shallow flat pan, add carom seeds, coriander seeds and cumin seeds. Stir for about 30 seconds till fragrant. Add the flour and cook till flour starts to change colour.
  • Add the colocasia and sprinkle chilli, dry mango powder and chat masala. Now cook on low heat for 15-20 minutes. Do not stir too often.
  • Cook till dry and crisp on both side. Sprinkle salt if needed. Mix green chillies and coriander leaves. Serve hot.

  • ½ kg colocasia
  • 1 teaspoon salt
  • 2 tablespoon coriander seeds
  • 1 teaspoon cumin seeds
  • 2 teaspoon carom seeds
  • 2 teaspoon dry mango powder
  • 2-3 green chillies - cut into thin strips
  • 2-3 tablespoon green coriander leaves - chopped
  • 5 tablespoon sesame oil
  • 4 tablespoon whole wheat flour
  • 1 teaspoon red chilli powder
  • 1 teaspoon chat masala
