Preparation Method :
- Wash, peel and slice the potatoes into 5mm rounds. Place these in a bowl with water to prevent discolouring.
- In a deep frying pan heat the oil until hot and add the cumin seeds and curry leaves.
- Lower the heat to medium and add dried red chillies. Fry until these turn a shade darker.
- Drain and pat dry the potatoes and add these to the seasoned oil.
- Add the salt and fry the potatoes until they are cooked through.

- 3 medium potatoes
- 5 tablespoons peanut oil
- ½ teaspoon whole cumin seeds
- 3 curry leaves
- 3 dried red chillies
- 1 teaspoon salt
