Preparation Method :
- Bring about 1½ litres of water to a rapid boil in a pan and parboil the potatoes. Cut the potatoes in wedges.
- In a mixing bowl, combine the potato wedges with turmeric powder, coriander powder, chilli powder and salt. Toss well and keep aside for 5 minutes.
- Heat oil in a frying pan over medium heat; add garlic paste and onion puree and saute till golden. Add the green chilli, stir and add the tomato puree. Saute for 1 more minute.
- Add the potatoes and toss well to coat the masala mixture. Stir every 5 minutes to ensure even cooking.
- When the potatoes are just tender, sprinkle over with the dried mango powder and serve hot with rice and curry.

- 3 large potatoes
- 1 teaspoon turmeric powder
- 3 teaspoons coriander powder
- ½ teaspoon red chilli powder
- Salt to taste
- 2 tablespoons IDHAYAM sesame oil
- 1 tablespoon garlic paste
- 2 large onions, pureed
- 2 teaspoons finely chopped green chillies
- 2 large tomatoes, pureed
- ½ teaspoon dried mango powder (amchur)
