TAWA ALOO

Preparation Method :

  • Bring about 1½  litres of water to a rapid boil in a pan and parboil the potatoes. Cut the potatoes in wedges.
  • In a mixing bowl, combine the potato wedges with turmeric powder, coriander powder, chilli powder and salt. Toss well and keep aside for 5 minutes.
  • Heat oil in a frying pan over medium heat; add garlic paste and onion puree and saute till golden. Add the green chilli, stir and add the tomato puree. Saute for 1 more minute.
  • Add the potatoes and toss well to coat the masala mixture. Stir every 5 minutes to ensure even cooking.
  • When the potatoes are just tender, sprinkle over with the dried mango powder and serve hot with rice and curry.

INGREDIENTS

  • 3 large potatoes
  • 1 teaspoon turmeric powder
  • 3 teaspoons coriander powder
  • ½ teaspoon red chilli powder
  • Salt to taste
  • 2 tablespoons IDHAYAM sesame oil
  • 1 tablespoon garlic paste
  • 2 large onions, pureed
  • 2 teaspoons finely chopped green chillies
  • 2 large tomatoes, pureed
  • ½ teaspoon dried mango powder (amchur)
