SPICED POTATOES AND CARROTS PARISIENNE

Preparation Method :
- Cook the carrots, potatoes and green beans into a pan of boiling water for about 5-7 minutes or until they are just tender but firm to bite . Drain and set it aside.
- Heat the butter and oil in a deep frying pan or a large karahi and add the onion seeds, fenugreek seeds, dried red chillies, and mustard seeds and curry leaves.
- When sizzled for a few seconds, add the onion and fry for 5 minutes, stirring the mixture occasionally.
- Add the salt, garlic and fresh chillies, with the cooked vegetables and stir gently for about 5 minutes, over a medium heat.
- Add the fresh coriander and mint and serve hot.

- 150 grams parisienne carrots
- 150 grams parisienne potatoes
- 125 grams green beans, sliced
- 75 grams tablespoon butter
- 1 tablespoon Cooking oil
- ¼ teaspoon onion seeds
- ¼ teaspoon fenugreek seeds
- 4 dried red chillies
- ½ teaspoon mustard seeds
- 6 curry leaves
- 1 medium onion, sliced
- 1 teaspoon salt
- 4 garlic cloves, sliced
- 4 fresh red chillies
- 1 tablespoon chopped fresh coriander (cilantro)
- 1 tablespoon chopped fresh mint, plus 1 mint sprig to garnish
