POTATOES WITH SPICES AND ONIONS

Preparation Method :
- Heat the oil in a large saucepan. Add the onions and fry, until golden brown.
- Simmer to low flame, add the ginger, garlic, chilli powder, ground cumin, ground coriander and salt and stir-fry for a minute.
- Remove the pan from the heat and set aside.
- Add the drained potatoes to the onion mixture and spice mixture. Sprinkle the lemon juice and mix well.
- The Seasoning: Heat little oil in a separate saucepan. Add all the seasoning ingredients and fry, until the seeds turn a shade darker.
- Remove the pan from the heat and pour it over the spicy potato mixture.
- Garnish with coriander leaves and chilies.
INGREDIENTS
- 500 grams new potatoes, drained
- 100 grams medium-sized onions, finely chopped
- 50 ml Cooking oil
- 1 inch fresh ginger root, finely chopped
- 4-5 fresh garlic cloves, crushed
- Salt and chili powder, to taste
- 2 teaspoon ground cumin
- 2 teaspoon ground coriander
- 1 tablespoon lemon juice
Seasoning
- 2 teaspoon Cooking oil
- 3-4 dried red chilies
- ½ teaspoon onion seeds
- ½ teaspoon mustard seeds
- ½ teaspoon fenugreek seeds
To Garnish
- Fresh coriander leaves
- 1-2 green chili, finely chopped
