KARAHI POTATOES WITH WHOLE SPICES

Preparation Method :
- Heat the oil in a heavy pan. Lower the heat slightly and add all the ingredients except corinander and chillies . Fry for 1 minute.
- Add the onions and fry for 3- 5 minutes or until the onions turns golden brown.
- Add the potatoes, fresh coriander and fresh red and green chillies and mix well.
- Cover the pan tightly with a lid or foil; make sure that foil does not touch the food.
- Cook over a very low heat for about 5-7 minutes or until the potatoes are tender.
- Remove the pan from the heat, and take off the lid or foil cover. Serve hot straight from the pan.

- 1 tablespoon Cooking oil
- 1 teaspoon cumin seeds
- 3 curry leaves
- 1 teaspoon crushed dried red chilies
- ½ teaspoon mixed onion, mustard and fenugreek seeds
- ½ teaspoon fennel seeds
- 4 garlic cloves, sliced
- 1 in piece fresh root ginger, grated
- 2 onions, sliced
- 6 new potatoes, thinly sliced
- 1 tablespoon chopped fresh coriander (cilantro)
- 1 fresh red chilli, seeded and sliced
- 1 fresh green chilli, seeded and sliced
