- Cook the vegetables together until soft.
- Drain and leave in a sieve for about 5-7 minutes to remove excess moisture.
- Mash the vegetables and add ginger, garlic, chilli, salt and tomato puree. With fresh coriander. Now mix in the cashew-nuts.
- Make it into small balls and flatten each in the palm of your hand.
- Heat the oil in a frying pan and fry gently over a medium heat, turn once.
- Place on a kitchen paper to remove excess oil.
