DRY-SPICED POTATOES WITH CAULIFLOWER

Preparation Method :
- Par-boil the potatoes in a large pan of boiling water for about 10 - 12 minutes. Drain the potatoes and set them aside.
- Heat the oil in a wok or large pan over a medium heat and fry the cumin seeds until they begin to splutter. Add the fresh green chilli and fry for 1 more minute.
- Add the cauliflower florets to the pan and fry for 3 - 5 minutes.
- Add the potatoes, spices with salt and cook for further 10 minutes or until vegetables are tender. Garnish with chopped coriander and serve with tomato and onion Salad.
INGREDIENTS
- 500 grams cauliflower, broken into florets
- 500 grams potatoes, peeled and washed potatoes, Cut into small cubes
- 2 tablespoon IDHAYAM sesame oil
- 1 teaspoon cumin seeds
- 2 fresh green chillies, finely chopped
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- ½ teaspoon chilli powder
- ½ teaspoon ground turmeric
- Salt, to taste
- Chopped fresh coriander, to garnish
- Tomato and Onion Salad, to serve
