ALOO KI BHAJI

Preparation Method :

  • Heat oil in a frying pan; add the curry leaves and onion seeds. When the spices crackle, add onions and saute till translucent.
  • Add potatoes, cumin powder, sugar, turmeric, mustard seeds and chilli powder and toss well. Cook for a minute.
  • Add tamarind pulp with water, cover and cook for 5 minutes.
  • Mix in chillies, coriander, mint and salt. Cook for 2 more minutes and remove from heat.
  • Serve with hot puris.

INGREDIENTS

  • 3 tablespoons IDHAYAM sesame oil
  • A sprig of fresh curry leaves
  • ½ teaspoon onion seeds (Kalonji)
  • 2 large onions, finely sliced
  • 5 large potatoes, parboiled and diced
  • 1 teaspoon cumin powder
  • 1 teaspoon sugar
  • ½ teaspoon turmeric powder
  • 1 teaspoon mustard seeds
  • ½ teaspoon red chilli powder
  • 50 ml tamarind pulp
  • 2 green chillies, finely chopped
  • 50 grams fresh coriander, finely chopped
  • 50 grams fresh mint, finely chopped
  • Salt to taste
