Preparation Method :
- Heat oil in a frying pan; add the curry leaves and onion seeds. When the spices crackle, add onions and saute till translucent.
- Add potatoes, cumin powder, sugar, turmeric, mustard seeds and chilli powder and toss well. Cook for a minute.
- Add tamarind pulp with water, cover and cook for 5 minutes.
- Mix in chillies, coriander, mint and salt. Cook for 2 more minutes and remove from heat.
- Serve with hot puris.
INGREDIENTS
- 3 tablespoons IDHAYAM sesame oil
- A sprig of fresh curry leaves
- ½ teaspoon onion seeds (Kalonji)
- 2 large onions, finely sliced
- 5 large potatoes, parboiled and diced
- 1 teaspoon cumin powder
- 1 teaspoon sugar
- ½ teaspoon turmeric powder
- 1 teaspoon mustard seeds
- ½ teaspoon red chilli powder
- 50 ml tamarind pulp
- 2 green chillies, finely chopped
- 50 grams fresh coriander, finely chopped
- 50 grams fresh mint, finely chopped
- Salt to taste
