Preparation Method :
- Peel and dice the potatoes into about 1 cm pieces. Place in a bowl of water to prevent discolouring and set aside.
- Fry onions in hot oil until golden brown. Remove them with a slotted spoon, leave the oil in the pan. Chop very finely in a food processor for about 30- 40 seconds.
- Return the onions to the pan and add salt and all the ground and whole spices to the onions and fry for about a minute. (except the green chillies and fresh coriander)
- Whip the yogurt and add gradually it to the onion mixture.
- Mix everything together and stir-fry using a wooden spoon for another 2 minutes .
- Add potatoes, green chillies and fresh coriander. Stir well and add the water.
- Simmer, covered over a low heat for at least 5 -7 minutes or until the potatoes are cooked through.
- Garnish with fresh coriander before serving.
INGREDIENTS
- 3 medium potatoes
- 1 large onion, peeled and sliced
- 75 ml IDHAYAM MANTRA peanut oil
- 1 teaspoon salt
- 1 teaspoon chilli powder
- 1 teaspoon ginger root, diced and crushed
- 1 teaspoon crushed garlic
- ½ teaspoon garam masala
- ¼ teaspoon black cumin seeds
- 3 green cardamoms
- 4 black peppercorns
- 2 tablespoon natural yogurt
- 2 whole green chillies
- 1 tablespoon fresh coriander
- 175 ml water
