Preparation Method :
- Heat corn oil until hot and fry the onions with dried red chillies, green chillies and fresh coriander for at least a minute.
- Add okra and salt and stir-fry for 5-7 minutes over a low heat. Sprinkle with lemon juice and set aside.
- Heat the oil in a deep frying pan and fry cumin seeds for few minutes.
- Add potatoes to the oil and fry until cooked through and golden .
- Remove from heat and place on kitchen paper to remove excess oil.
- Transfer okra and potatoes to a serving dish ,garnished with fresh coriander.
INGREDIENTS
- 5 tablespoons peanut oil
- 2 medium onions, peeled and sliced
- 3 dried red chillies
- 2 green chillies, deseeded and chopped if desired
- 2 tablespoons chopped fresh coriander
- 250 grams okra, washed and cut into 1 cm pieces
- 1 teaspoon salt
- 2 tablespoons lemon juice
- 3 tablespoons Cooking oil
- 1 teaspoon white cumin seeds
- 2 medium potatoes, peeled and roughly diced
- 1 tablespoon fresh coriander to garnish
