ALOO BHINDI

Preparation Time :
20 minutes

Cooking Time :
15 minutes

Preparation Method :

  • Heat corn oil until hot and fry the onions with dried red chillies, green chillies and fresh coriander for at least a minute.
  • Add okra and salt and stir-fry for 5-7 minutes over a low heat. Sprinkle with lemon juice and set aside.
  • Heat the oil in a deep frying pan and fry cumin seeds for few minutes.
  • Add potatoes to the oil and fry until cooked through and golden .
  • Remove from heat and place on kitchen paper to remove excess oil.
  • Transfer okra and potatoes to a serving dish ,garnished with fresh coriander.

INGREDIENTS

  • 5 tablespoons peanut oil
  • 2 medium onions, peeled and sliced
  • 3 dried red chillies
  • 2 green chillies, deseeded and chopped if desired
  • 2 tablespoons chopped fresh coriander
  • 250 grams okra, washed and cut into 1 cm pieces
  • 1 teaspoon salt
  • 2 tablespoons lemon juice
  • 3 tablespoons Cooking oil
  • 1 teaspoon white cumin seeds
  • 2 medium potatoes, peeled and roughly diced
  • 1 tablespoon fresh coriander to garnish
