Preparation Method :
- Mix the amchur, ginger, cumin, chilli, if using, turmeric and salt with a few drops of vegetable oil in a bowl. Allow to rest for an hour.
- Part the slit carefully without opening it all the way and fill each with the filling.
- Coat the okra with the cornflour evenly.
- Heat a wok or large pan with enough oil and fry the okra in batches for about 5 minutes or until they are brown and slightly crisp. Serve hot.
INGREDIENTS
- 220 grams okra, washed, tips trimmed, slit lengthwise in the centre.
- 20 grams corn flour
- ½ teaspoon ground cumin
- ½ teaspoon chilli powder
- 1 tablespoon amchur
- ½ teaspoon ground ginger
- ¼ teaspoon ground turmeric
- IDHAYAM Sesame Oil, for frying and mixing
- Salt, to taste
