STIR FRIED OKRA WITH ONIONS

Preparation Method :
- Scrub and wash the okra and slice into halve.
- Remove the seeds and core from the red pepper and cut into 1-inch strips. Halve the onion lengthways and cut into ¼ - inch thick slices.
- Heat the oil in a heavy-based frying pan over a medium heat. Add the mustard seeds, followed by the cumin seeds.
- Remove from the heat and add the garlic. Return to a low heat and cook the garlic gently, stirring, for 1 minute, or until lightly browned.
- Add the okra, red pepper and onion, increase the heat to medium-high and stir-fry for 2 minutes. Add the chilli powder and salt and stir-fry for a further 3 minutes.
- Add the garam masala and stir-fry for 1 minute. Remove from the heat and serve immediately with plain boiled basmati rice.

- 150 grams okra

- 1 tablespoon Cooking oil
- ½ teaspoon black or brown mustard seeds
- ¼ teaspoon cumin seeds
- 1½ large garlic cloves, lightly crushed, then chopped
- ¼ teaspoon chilli powder
- ¼ teaspoon salt
- ¼ teaspoon garam masala
