SPICY OKRA

Preparation Method :

  • Heat the oil in a shallow pan over a medium heat and add the cumin and mustard seeds. When the seeds begin to sizzle, add the onion, ginger and garlic and fry for a minute or two.
  • Tip in the okra, salt and the ground spices, except the garam masala. Stir to coat the okra with the spice mixture for about 3-5 minutes.
  • Add the cherry tomatoes and continue to cook the okra for a further 10-12 minutes over a low heat, stirring occasionally. Stir in the butter. Mix in the garam masala before serving.
  • Serve with Mushroom Rice and Chapatis.

INGREDIENTS

  • 500 grams okra, washed, top and tail, cut into 1 inch pieces
  • 1 onion, roughly chopped
  • 1 tablespoon butter
  • 50 ml Cooking oil
  • 1 inch piece of ginger, chopped
  • 2-3 garlic cloves, crushed
  • Salt to taste
  • 8-10 cherry tomatoes, sliced
  • ¼ teaspoon garam masala
  • ½ teaspoon mustard seeds
  • ½ teaspoon cumin seeds

Ground Spices

  • ½ teaspoon coriander powder
  • ¼ teaspoon turmeric powder
  • ½ teaspoon chilli powder
