Preparation Method :
- Heat the oil in a shallow pan over a medium heat and add the cumin and mustard seeds. When the seeds begin to sizzle, add the onion, ginger and garlic and fry for a minute or two.
- Tip in the okra, salt and the ground spices, except the garam masala. Stir to coat the okra with the spice mixture for about 3-5 minutes.
- Add the cherry tomatoes and continue to cook the okra for a further 10-12 minutes over a low heat, stirring occasionally. Stir in the butter. Mix in the garam masala before serving.
- Serve with Mushroom Rice and Chapatis.
INGREDIENTS
- 500 grams okra, washed, top and tail, cut into 1 inch pieces
- 1 onion, roughly chopped
- 1 tablespoon butter
- 50 ml Cooking oil
- 1 inch piece of ginger, chopped
- 2-3 garlic cloves, crushed
- Salt to taste
- 8-10 cherry tomatoes, sliced
- ¼ teaspoon garam masala
- ½ teaspoon mustard seeds
- ½ teaspoon cumin seeds
Ground Spices
- ½ teaspoon coriander powder
- ¼ teaspoon turmeric powder
- ½ teaspoon chilli powder
