SPICY LADIES FINGER MASALA

Preparation Method :
- In the pan, add oil ,sauté all the masala items except spicy,dry masala powders for a couple of minutes. Cool it down to the room temperature.
- Grind the sauted items along with the rest of the spicy masala powders and salt to a smooth paste.
- Wash ladies finger, remove the edges and slit at the center .Do not slit till the edges.
- In a bowl, mix red chili powder, coriander powder, Jeera powder and salt to taste. Stuff the masala into the ladies finger.
- Heat a shallow pan. add oil and fry the stuffed ladies finger. Once it is fried well, remove from the oil and keep it aside.
- Heat another pan and add oil .When the oil is hot, add mustard seeds.
- When the mustard seeds splutter, add bay leaves, curry leaves then add the ground masala along with enough water and let it boil.
- Then, simmer and add fried ladies finger and allow it to stand for five minutes.
- Finally add chopped coriander leaves for garnishing.
- Serve this ladies finger spicy masala either with chappathi or rice.
INGREDIENTS
For the masala:
- 100 grams Grated coconut
- 1 Tomato, chopped
- ½ tablespoon Ginger and garlic paste
- 2 Green chillies
- 2 Cardamom
- 3 Cloves
- 5 Cashew nuts
- 1 small piece Cinnamon stick
- ½ tablespoon Fennel seeds
- ½ tablespoon Red chili powder
- 1 tablespoon Coriander powder
- 1 pinch Turmeric powder
- Salt to taste
For the stuffing:
- 300 grams Ladies finger
- 1 tablespoon Red chili powder
- 2 tablespoon Coriander powder
- ½ tablespoon Jeera powder
- Salt to taste
For making gravy:
- 2 tablespoon Cooking oil
- 1 Bay leaf
- ½ tablespoon Mustard seeds
- 1 tablespoon Curry leaves
- 2 tablespoon Coriander chopped
