Preparation Method :
- Heat the oil in a large heavy pan. Add the cumin seeds and mud seeds and fry until they start to splutter.
- Mix the turmeric, chili powder, cumin, ground coriander, salt, sugar, lemon juice and fresh coriander in a mixing bowl .
- Add in the spice mixture and continue to fry for 3-5 minutes.
- Add the okra, cover and cook over a low heat until tender.
- Transfer to a serving platter and garnish with chopped fresh tomatoes.
INGREDIENTS
- 450 grams okra (ladies finger), washed and trimmed
- ½ teaspoon ground turmeric
- 1 teaspoon chilli powder
- 1 tablespoon ground cumin
- 1 tablespoon ground coriander
- Salt to taste
- ¼ teaspoon granulated sugar
- 1 tablespoon lemon juice
- 2 tablespoon chopped fresh coriander
- 1 tablespoon IDHAYAM sesame oil
- ½ teaspoon cumin seeds
- ½ teaspoon black mustard seeds
- Chopped fresh tomatoes, to garnish
