CURRIED OKRA

Preparation Method :
- Wash the okra, trim off the stalks and pat dry. Heat the oil in a large pan, add the spring onions (scallions), garlic, ginger and chili and fry gently for 1 minute, stirring frequently.
- Stir in the spices and fry gently for 30 seconds, then add the tomatoes, stock and okra. Season with salt and pepper to taste and simmer for about 15 minutes, stirring and turning the mixture occasionally. The okra should be cooked but still a little crisp.
- Sprinkle with the garam masala, taste and adjust the seasoning, if necessary. Garnish with the chopped coriander and serve hot.

- 500 grams fresh okra
- 4 tablespoon IDHAYAM sesame oil
- 1 bunch spring onions( scallions), trimmed and sliced
- 2 garlic cloves, peeled and crushed
- 2 inch ginger root, peeled and chopped
- 1 teaspoon minced chili( from a jar)
- 1 ½ teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon turmeric
- 250 grams chopped tomatoes
- 150 ml vegetable stock
- Salt and freshly ground black pepper
- 1 teaspoon garam masala
- Chopped fresh coriander, to garnish
