Preparation Method :
- Heat a shallow pan until hot, add the oil and add the garlic and chillies, then stir-fry for a few seconds.
- Add the shallots and stir-fry until softened. Add the mushrooms and stir-fry for 3-5 minutes.
- Pour in the coconut milk , boil rapidly over high heat until the liquid has reduced by about half and coats the mushrooms. Season to taste with salt and pepper.
- Sprinkle the chopped coriander and toss gently to mix. Serve at once.
INGREDIENTS
- 250 grams, sliced, brown-cap mushrooms
- 2 garlic cloves, finely chopped
- 2 fresh red chillies, seeded and sliced into rings
- 3-5 shallots, finely chopped
- 2 tablespoon Cooking oil
- 150 ml coconut milk
- 2 tablespoon chopped fresh coriander
- Salt and black pepper
