VEGETARIAN MINCE WITH PEAS

Cooking Time :
15 minutes

Preparation Method :

  • Heat the oil in a non-stick large saucepan. Add the peas and mince, stir-fry for about 1-2 minutes.
  • Add the curry and garlic pastes with tomato puree, chilli powder and water, bring to the boil, cover and simmer for about 10-12 minutes.
  • Stir in the yogurt and adjust seasoning with salt.
  • Stir in the garam masala, cumin powder, lemon juice and coriander with little water and cook for 1 more minute or until the mince is moist. Serve hot.

INGREDIENTS

  • 300 grams vegetarian mince or packet quorn
  • 100 grams shelled fresh green peas,
  • 50 grams Curry Paste
  • 150 ml hot water
  • 2 tablespoon low-fat yogurt, beaten
  • 1 tablespoon Cooking oil
  • 1 teaspoon garlic paste
  • 2 teaspoon tomato puree
  • ½ teaspoon red chilli powder
  • ½ teaspoon garam masala
  • 1 teaspoon cumin powder
  • Salt to taste
  • Lemon juice to taste
  • A handful of chopped fresh coriander leaves and stalks
