Preparation Method :
- Heat the oil in a large deep saucepan and add whole spices. Gradually add all the vegetables and sprinkle with the salt.
- Saute the vegetables for about 5 minutes, stir gently with a slotted steel spoon to prevent them being broken up.
- Sprinkle over the desiccated coconut and stir it in well.
- Garnish with mint leaves and lime wedges, Serve hot.
INGREDIENTS
- 60 ml Cooking oil
- ½ teaspoon mustard seeds
- 5 curry leaves
- ½ teaspoon onion seeds
- 5 dried red chillies
- 3 courgettes, cut into 6mm slices
- 4 carrots, cut thinly into 2.5cm long pieces
- 150 grams green beans, cut into 2.5cm pieces
- 9 baby corns
- 200 grams cauliflower
- 1 teaspoon salt
- 2 tablespoons desiccated coconut
- Mint leaves and 2 limes, to garnish
