Preparation Method :
- Heat the oil in a large saucepan. Add the mustard, onion and white cumin seeds along with the curry leaves and fry until they turn a shade darker.
- Add in the onions to the pan followed by the tomatoes and bell pepper, stir fry each for about 5-7 minutes.
- Add the ginger, garlic, chilli powder, turmeric and salt, mix well.
- Add the water, cover and simmer for about 10-15 minutes.
- Add the vegetable mixture and stir-fry for about 5 minutes.
- Add the lemon juice, stirring to combine. Stir in little water if needed, cover and simmer for about 10-15 minutes, stirring occasionally.
- Transfer the mixed vegetables to serving plates and serve hot.
INGREDIENTS
- 500 grams onions, finely chopped
- 250 grams tomatoes, chopped
- ½ red bell pepper, sliced
- ½ green bell pepper, sliced
- 100 ml Cooking oil
- 1 teaspoon mustard seeds
- 1 teaspoon onion seeds
- ½ teaspoon white cumin seeds
- Few curry leaves, chopped
- 500 ml water
- 1 tablespoon lemon juice
Spicy Mixture
- 1 inch fresh ginger root, finely chopped
- 4-5 fresh garlic cloves, crushed
- Chilli powder and salt, to taste
- ½ teaspoon turmeric
Vegetable Mixture
- 150 grams medium potatoes, peeled and cut into pieces
- ½ cauliflower, cut into small florets
- 250 grams carrots, peeled and sliced
- 3-4 green chillies, finely chopped
- Fresh coriander leaves
