MIXED VEGETABLES WITH COCONUT AND CURRY LEAVES

Preparation Time :
15 minutes

Cooking Time :
25 minutes

Preparation Method :

  • Cook the vegetables, add in a cup water, red chilli powder and turmeric powder.
  • When the vegetables are almost done, add the green chillies, mango and onion; mix well. Adjust seasoning with salt to taste.
  • Simmer to low flame and stir in the yogurt mixture. Remove the pan from the heat and mix in the curry leaves and oil. Serve hot.

INGREDIENTS

  • 550 grams  mixed vegetables, diced (Drumsticks, carrots, raw bananas, string beans)
  • Raw Mango, sliced to taste
  • 2 tablespoon IDHAYAM Sesame Oil
  • 1 Onion, cut into 8-10 pieces
  • ¼ teaspoon Turmeric powder
  • 10 Green chillies slit into half
  • Red chilli powder and Salt to taste
  • Few sprigs Curry leaves  
  • Coconut Paste - Ground to Paste
  • 50 ml Yogurt  
  • A pinch Cumin seeds
  • 150 grams Coconut, grated
  • 3-4 Garlic cloves
