Preparation Method :
- To make the spice paste: Grind all the ingredients for the spice paste with very little water.
- Heat the ghee and add all the ingredients for tempering. When the mustard seeds splutter, add the chopped onion and saute for a couple of minutes.
- Add the chopped vegetables and green peas with salt, turmeric powder and sufficient water. Simmer till the vegetables are tender.
- Mix in the spice paste and simmer for about a minute.
- Garnish with chopped coriander leaves and fried cashewnuts.
- Serve hot with poori.
INGREDIENTS
- 50 grams onion, chopped fine
- 150 grams chopped mixed vegetables (chow chow, cabbage and French beans)
- 50 grams carrots, chopped
- 50 grams potato, chopped
- 250 grams shelled green peas
- Salt to taste
- ½ teaspoon turmeric powder
- A bunch of coriander leaves, chopped fine for garnishing
- 1 tablespoon fried cashew nuts for garnishing
Spice Paste
- 4 green chillies
- 1 tablespoon fried Bengal gram dhal
- ½ teaspoon black peppercorns
- 1 tablespoon coriander powder
- 1 teaspoon cumin seeds
- 1 small stick cinnamon
- 3 cloves
- 75 grams grated fresh coconut
Tempering
- 2 tablespoon ghee
- 1 teaspoon mustard seeds
- 1 dry red chilli, halved
- 1 teaspoon black gram dhal
- ½ teaspoon asafoetida powder
- A few curry leaves
