MIX SUBZEE

Preparation Method :

  • Heat the oil in a heavy-based saucepan , add all the seeds and wait until they turn a shade darker, then add the onions and fry until golden brown.
  • Lower the heat and gradually add garlic, salt, spices, tomato puree and lemon juice, and stir-fry for about 2- 3 minutes.
  • Add the diced tomatoes and all the other vegetables and mix well to coat with the spices.
  • Add the fresh coriander and water, cover and simmer until the vegetables are tender. Remove the lid and stir occasionally until the oil separates. Serve hot.

INGREDIENTS

  • 50 ml Cooking oil
  • 1 teaspoon mixed onion, mustard and white cumin seeds
  • 3 medium onions, peeled and chopped
  • 1 teaspoon chilli powder 
  • 1 teaspoon diced and crushed ginger root 
  • ½ teaspoon ground cumin 
  • ½ teaspoon ground coriander 
  • 1 teaspoon crushed garlic
  • 2 tablespoons tomato puree
  • 1 tablespoon lemon juice
  • 3 fresh tomatoes, diced
  • 100 grams cauliflower, cut into small florets
  • 100 grams diced aubergine
  • 130 grams fresh green beans, cut into 1 cm pieces
  • 2 tablespoons chopped fresh coriander
  • 1 teaspoon salt 
  • 200 ml water
