Preparation Method :
- Heat the oil in a heavy-based saucepan , add all the seeds and wait until they turn a shade darker, then add the onions and fry until golden brown.
- Lower the heat and gradually add garlic, salt, spices, tomato puree and lemon juice, and stir-fry for about 2- 3 minutes.
- Add the diced tomatoes and all the other vegetables and mix well to coat with the spices.
- Add the fresh coriander and water, cover and simmer until the vegetables are tender. Remove the lid and stir occasionally until the oil separates. Serve hot.
INGREDIENTS
- 50 ml Cooking oil
- 1 teaspoon mixed onion, mustard and white cumin seeds
- 3 medium onions, peeled and chopped
- 1 teaspoon chilli powder
- 1 teaspoon diced and crushed ginger root
- ½ teaspoon ground cumin
- ½ teaspoon ground coriander
- 1 teaspoon crushed garlic
- 2 tablespoons tomato puree
- 1 tablespoon lemon juice
- 3 fresh tomatoes, diced
- 100 grams cauliflower, cut into small florets
- 100 grams diced aubergine
- 130 grams fresh green beans, cut into 1 cm pieces
- 2 tablespoons chopped fresh coriander
- 1 teaspoon salt
- 200 ml water
