Preparation Method :
- Heat the oil in a heavy saucepan. Add onion and mustard seeds along with the curry leaves, and lower the heat a little.
- Add the chopped tomatoes, spices, garlic, salt and fresh coriander. Stir-fry for 2 minutes.
- Now add the potatoes and cauliflower ,continue to stir-fry for a further 2-3 minutes.
- Cover and simmer until the potatoes are cooked, add a little water if needed . Stir in the fresh cream and serve hot.
INGREDIENTS
- 75 ml sesame oil
- ½ teaspoon mixed onion and mustard seeds
- 3 curry leaves
- 450 grams can chopped tomatoes
- 1 teaspoon diced and crushed ginger root
- ½ teaspoon chilli powder
- ½ teaspoon ground cumin
- 1 teaspoon crushed garlic
- 1 teaspoon ground coriander
- 1 teaspoon salt
- 2 tablespoons chopped fresh coriander
- 100 grams potatoes, peeled and diced
- 100 grams cauliflower florets
- 4 tablespoons fresh single cream
