Preparation Method :
- Prepare the spring onions by washing, topping and tailing them, and cut the green and white parts, into 2.5cm pieces.
- Heat the oil and fry them lightly until just soft, then add handful fresh coriander, and the curry leaves.
- Stir around over a medium heat with a wooden spoon. Now add the potatoes and cut green beans, with cut green chillies and stir in the salt.
- Add the water, lower the heat, cover and simmer for 10 minutes or until the potatoes are cooked through.
- Garnish with the fresh green chillies, chopped and deseeded or whole with the remaining fresh coriander.
INGREDIENTS
- 2 bunches spring onions
- 60 ml Cooking oil
- 1 bunch fresh coriander, chopped
- 4 fresh or dried curry leaves
- 10 new potatoes, scraped and halved
- 200 grams cut green beans
- 3 fresh green chillies, cut into 1 cm pieces, deseeded if desired
- 1 teaspoon salt
- 200 ml water
- 4 fresh deseeded and chopped green chillies to garnish
