HARAY MASALAY KI SUBZEE

Preparation Time :

Cooking Time :
20 minutes

Preparation Method :

  • Prepare the spring onions by washing, topping and tailing them, and cut the green and white parts, into 2.5cm pieces.
  • Heat the oil and fry them lightly until just soft, then add handful fresh coriander, and the curry leaves.
  • Stir around over a medium heat with a wooden spoon. Now add the potatoes and cut green beans, with cut green chillies and stir in the salt.
  • Add the water, lower the heat, cover and simmer for 10 minutes or until the potatoes are cooked through.
  • Garnish with the fresh green chillies, chopped and deseeded or whole with the remaining fresh coriander.

INGREDIENTS

  • 2 bunches spring onions
  • 60 ml Cooking oil
  • 1 bunch fresh coriander, chopped
  • 4 fresh or dried curry leaves 
  • 10 new potatoes, scraped and halved 
  • 200 grams cut green beans 
  • 3 fresh green chillies, cut into 1 cm pieces, deseeded if desired
  • 1 teaspoon salt
  • 200 ml water
  • 4 fresh deseeded and chopped green chillies to garnish
