BALTI STIR-FRIED VEGETABLES WITH CASHEW NUTS

Preparation Method :
- Heat the oil in a karahi, wok or heavy pan and fry the curry cumin seeds and dried chilies for 1 minute.
- Cut the carrots, peppers and courgettes into matchsticks, halve the beans and chop the spring onions. Set aside.
- Add the vegetables and nuts and stir them around gently. Sprinkle the salt and lemon juice. Continue to and cook for about 5 minutes.
- Transfer the vegetables to a serving dish, garnish with fresh mint and serve immediately.

- 2 medium carrots
- 1 medium red pepper, seeded
- 1 medium green pepper, seeded
- 2 courgettes
- 125 grams green beans
- 1 medium bunch spring onions (scallions)
- 1 tablespoon Cooking oil
- 6 curry leaves
- ½ teaspoon cumin seeds
- 4 dried red chilies
- 10 cashew nuts
- Salt to taste
- 2 tablespoon lemon juice
- Fresh mint leaves, to garnish
