BALTI MIXED VEGETABLES

Preparation Time :
15 minutes

Cooking Time :
20 minutes

Preparation Method :

  • Heat the oil in a large heavy-based frying pan and gently fry the onion for about 3-5 minutes or until lightly browned.
  • Add the garlic, ginger, chilli powder, ground coriander, turmeric and a pinch of salt. Fry for about 2 minutes,
  • Add the diced vegetables and stir- fry for a further 2-3 minutes. Add the chopped tomatoes. Stir well and add a little water.
  • Cover and cook gently for 10 minutes or until the vegetables are tender, add little water if needed. Serve with chapatis.

INGREDIENTS

  • 750 grams diced mixed vegetables
  • 150 grams tomatoes, skinned and chopped
  • 50 ml Cooking oil
  • 1 onion, chopped
  • 1 tablespoon ground coriander
  • 1 garlic clove, crushed
  • 1 inch piece fresh root ginger, grated
  • ½ teaspoon turmeric
  • Chilli powder and salt, to taste
  • Chapatis, to serve
