Preparation Method :
- Heat the oil in a large heavy-based frying pan and gently fry the onion for about 3-5 minutes or until lightly browned.
- Add the garlic, ginger, chilli powder, ground coriander, turmeric and a pinch of salt. Fry for about 2 minutes,
- Add the diced vegetables and stir- fry for a further 2-3 minutes. Add the chopped tomatoes. Stir well and add a little water.
- Cover and cook gently for 10 minutes or until the vegetables are tender, add little water if needed. Serve with chapatis.
INGREDIENTS
- 750 grams diced mixed vegetables
- 150 grams tomatoes, skinned and chopped
- 50 ml Cooking oil
- 1 onion, chopped
- 1 tablespoon ground coriander
- 1 garlic clove, crushed
- 1 inch piece fresh root ginger, grated
- ½ teaspoon turmeric
- Chilli powder and salt, to taste
- Chapatis, to serve
