Preparation Method :
- Bring a medium pan of salted water to the boil and add the potatoes and carrots.
- Cook for 12-15 minutes, then add the courgettes and boil for a further 5 minutes or until all the vegetables are just tender.
- Take care not to overcook the vegetables, as they will be given a brief additional cooking time later.
- Drain the vegetables well and put them in a bowl. Set aside.
- Heat the oil in a karahi, wok or deep pan and add the baby onions.
- Fry until the onions turn golden brown. Lower the heat and add the chilli sauce, garlic, ginger and salt, taking care not to burn the mixture.
- Stir in the chickpeas and stir-fry over a medium heat until the moisture has been absorbed.
- Add the cooked vegetables and cherry tomatoes and stir over the heat with a slotted spoon for about 2 minutes.
- Sprinkle the crushed red chillies and sesame seeds evenly over the vegetable mixture as a garnish and serve.

- 1 teaspoon crushed garlic
- 1 teaspoon grated fresh root ginger
- Salt to taste
- 420 grams drained canned chickpeas
- 10 cherry tomatoes
- 1 teaspoon crushed dried red chillies
- 2 tablespoon sesame seeds
