PODINAY KI SUBZEE

Preparation Method :

  • Simmer the carrots, potatoes and beans in salted water until just tender but not mushy. Drain and set aside.
  • Heat the oil in a deep frying pan and fry the onions until golden brown.
  • Mix the ground spices, garlic and salt with yogurt. Pour this over the onions and stir-fry for about 2-3 minutes.
  • When the mixture begins to darken and thicken a little, add the vegetables and saute for about 5 minutes, stir gently so that you do not mash the potatoes.
  • Sprinkle in the fresh mint and coriander and mix in. Serve hot.

INGREDIENTS

  • 2 medium carrots, peeled and sliced
  • 1 teaspoon crushed garlic
  • 1 teaspoon ground coriander
  • 1 teaspoon salt
  • 2 medium potatoes, peeled and roughly diced 
  • 4 teaspoons natural yogurt
  • 2 tablespoons chopped fresh mint leaves
  • 130 grams sliced green beans 
  • 60 ml peanut oil
  • 1 teaspoon chilli powder
  • 1 tablespoon chopped fresh coriander
  • 2 medium onions, peeled and chopped 
  • 4 mint leaves to garnish
