Preparation Method :
- Simmer the carrots, potatoes and beans in salted water until just tender but not mushy. Drain and set aside.
- Heat the oil in a deep frying pan and fry the onions until golden brown.
- Mix the ground spices, garlic and salt with yogurt. Pour this over the onions and stir-fry for about 2-3 minutes.
- When the mixture begins to darken and thicken a little, add the vegetables and saute for about 5 minutes, stir gently so that you do not mash the potatoes.
- Sprinkle in the fresh mint and coriander and mix in. Serve hot.

- 2 medium carrots, peeled and sliced

- 1 teaspoon salt
- 2 medium potatoes, peeled and roughly diced
- 4 teaspoons natural yogurt
- 2 tablespoons chopped fresh mint leaves
- 130 grams sliced green beans
- 60 ml peanut oil
- 1 teaspoon chilli powder
- 1 tablespoon chopped fresh coriander
- 2 medium onions, peeled and chopped
- 4 mint leaves to garnish
