METHI TAMATAR

Preparation Method :

  • Combine all the spices, salt and lemon juice with the canned tomatoes, mix well and set aside.
  • Heat the oil and fry the onions until golden brown.
  • Add the fresh fenugreek leaves and stir-fry for about 2 minutes over a low heat.
  • Add the tomato mixture and stir in for 5 minutes or until the sauce has thickened. Add green chillies.
  • Transfer to a serving bowl and garnish with the hard-boiled eggs and fresh coriander.

INGREDIENTS

  • 3 medium onions, peeled and chopped
  • 1 teaspoon diced and crushed ginger root 
  • 100 grams fresh fenugreek leaves
  • 1 teaspoon crushed garlic 
  • ¼ teaspoon turmeric 
  • 3 green chillies, chopped and deseeded if desired
  • 1 teaspoon chilli powder 
  • 1 teaspoon salt 
  • 3 hard-boiled eggs, halved
  • 2 teaspoons lemon juice 
  • 1 tablespoon fresh coriander 
  • 450 grams canned tomatoes
  • 60 ml peanut oil
