Preparation Method :
- Combine all the spices, salt and lemon juice with the canned tomatoes, mix well and set aside.
- Heat the oil and fry the onions until golden brown.
- Add the fresh fenugreek leaves and stir-fry for about 2 minutes over a low heat.
- Add the tomato mixture and stir in for 5 minutes or until the sauce has thickened. Add green chillies.
- Transfer to a serving bowl and garnish with the hard-boiled eggs and fresh coriander.
INGREDIENTS
- 3 medium onions, peeled and chopped
- 1 teaspoon diced and crushed ginger root
- 100 grams fresh fenugreek leaves
- 1 teaspoon crushed garlic
- ¼ teaspoon turmeric
- 3 green chillies, chopped and deseeded if desired
- 1 teaspoon chilli powder
- 1 teaspoon salt
- 3 hard-boiled eggs, halved
- 2 teaspoons lemon juice
- 1 tablespoon fresh coriander
- 450 grams canned tomatoes
- 60 ml peanut oil
