SPICY BITTER GOURDS

Preparation Method :
- Cook the peeled bitter gourds in the boiling water for about 10-15 minutes or until just tender. Drain well.
- Heat the oil in a large heavy pan and fry the cumin seeds until they begin to splutter.
- Add the spring onions and fry for at least 3 minutes. Add the tomatoes, ginger, garlic and chillies, cook the mixture for another 5 minutes.
- Add the salt, sugar and spices to the pan and cook for at least 2 minutes. Add the bitter gourds to the pan and mix well. Sprinkle over the gram flour.
- Cover and simmer over a low heat until the entire gram flour has been absorbed into the sauce.
- Stir well, then serve garnished with fresh coriander sprigs.
INGREDIENTS
- 750 grams bitter gourds, peeled , sliced
- 7 spring onions ,finely chopped
- 5 tomatoes, finely chopped
- 1 in piece fresh root ginger, finely chopped
- 3 garlic cloves, crushed
- 3 fresh green chillies, finely chopped
- 1 tablespoon Cooking oil
- ½ teaspoon cumin seeds
- 1 teaspoon chilli powder
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 50 grams soft dark brown sugar
- 1 tablespoon gram flour
- Salt to taste
- Fresh coriander sprigs, to garnish
