SPICY BITTER GOURDS

Preparation Method :

  • Cook the peeled bitter gourds in the boiling water for about 10-15 minutes or until just tender. Drain well.
  • Heat the oil in a large heavy pan and fry the cumin seeds until they begin to splutter.
  • Add the spring onions and fry for at least 3 minutes. Add the tomatoes, ginger, garlic and chillies, cook the mixture for another 5 minutes.
  • Add the salt, sugar and spices to the pan and cook for at least 2 minutes. Add the bitter gourds to the pan and mix well. Sprinkle over the gram flour.
  • Cover and simmer over a low heat until the entire gram flour has been absorbed into the sauce.
  • Stir well, then serve garnished with fresh coriander sprigs.

INGREDIENTS

  • 750 grams bitter gourds, peeled , sliced
  • 7 spring onions ,finely chopped 
  • 5 tomatoes, finely chopped
  • 1 in piece fresh root ginger, finely chopped 
  • 3 garlic cloves, crushed 
  • 3 fresh green chillies, finely chopped 
  • 1 tablespoon Cooking oil 
  • ½ teaspoon cumin seeds
  • 1 teaspoon chilli powder
  • 1 teaspoon ground coriander 
  • 1 teaspoon ground cumin 
  • 50 grams soft dark brown sugar 
  • 1 tablespoon gram flour 
  • Salt to taste
  • Fresh coriander sprigs, to garnish
