FRIED BITTER GOURD

1 hour 30 minutes

Cooking Time :
15 minutes

Preparation Method :

  • Wash and deseed the bitter gourds and cut them into thin slices. Leave covered with the salt for at least 1½ hours, to draw out most of their bitter juices.
  • Wash thoroughly, pat dry and set aside. Heat the oil in a frying pan and fry the curry leaves and chopped green chillies.
  • Throw in all the bitter gourd slices and fry until they turn a little crisp but not burnt.
  • Sprinkle with poppy seeds and salt and serve.

INGREDIENTS

  • 2 curry leaves
  • 4 bitter gourds    
  • 2 green chillies, chopped
  • Salt to taste     
  • 1 tablespoon poppy seeds
  • 2 tablespoons Cooking oil    
  • ¼ teaspoon salt
