Preparation Method :
- Wash and deseed the bitter gourds and cut them into thin slices. Leave covered with the salt for at least 1½ hours, to draw out most of their bitter juices.
- Wash thoroughly, pat dry and set aside. Heat the oil in a frying pan and fry the curry leaves and chopped green chillies.
- Throw in all the bitter gourd slices and fry until they turn a little crisp but not burnt.
- Sprinkle with poppy seeds and salt and serve.

- 2 curry leaves
- 4 bitter gourds
- 2 green chillies, chopped
- Salt to taste
- 1 tablespoon poppy seeds
- 2 tablespoons Cooking oil
- ¼ teaspoon salt
