Preparation Method :
- Heat the oil in a large frying pan and fry the cumin, mustard, fenugreek and nigella seeds with aniseed for about half a minute.
- Add the potatoes and fry for 3-5 minutes. Add the pumpkin, stir well and fry for 5-7 minutes.
- Stir in the chilli powder, turmeric, ground coriander, sugar and salt to taste and continue frying for 5 minutes.
- Add the tamarind liquid, cover and cook until the potatoes are tender, adding a little more water if needed. Serve hot.

- 3 potatoes, cut into chunks
- 50 ml IDHAYAM Sesame Oil
- ½ teaspoon cumin seeds
- ¼ teaspoon mustard seeds
- 50 ml tamarind juice
- ¼ teaspoon fenugreek seeds
- ½ teaspoon nigella seeds
- 2 tablespon aniseed
- ½ teaspoon turmeric
- 2 teaspoon ground coriander
- ½ teaspoon sugar
- Chilli powder and salt, to taste
