GOBI KI BHUJIA

Preparation Method :

  • Heat the oil in a heavy-based saucepan and fry all the whole seeds and curry leaves until a shade darker. Add the onion, garlic, dried red chillies and salt.
  • Fry until the onions almost begin to caramelise but not burn.
  • Add the whole green chillies, cauliflower and coriander and stir-fry until tender. Serve immediately.

INGREDIENTS

  • 75 ml Cooking oil
  • ½ teaspoon onion seeds 
  • ½ teaspoon mustard seeds 
  • ½ teaspoon white cumin seeds 
  • 4 curry leaves
  • 1 large onion, peeled and sliced 
  • 4 dried red chillies
  • 1 teaspoon salt
  • 2 green chillies, chopped
  • 250 grams cauliflower, cut into small florets 
  • 2 tablespoons chopped fresh coriander 
  • 3 cloves garlic
