BALTI CORN WITH CAULIFLOWER AND MINT
This quick and tasty vegetable side dish can be made with frozen corn, so it is an excellent store-cupboard standby. If you do not have any cauliflower, substitute broccoli or another vegetable such as slices of courgette.

Preparation Method :
- Dice the onions finely. Slit the chilli, scrape out the seeds, and then slice the flesh thinly.
- Heat the oil in a karahi, wok, or heavy pan and stir-fry the curry leaves and onion seeds for about 30 seconds.
- Add the diced onions to the pan and fry them for 5 - 8 minutes until golden brown.
- Add the chilli, frozen corn and cauliflower florets and stir-fry for 5 - 8 minutes more.
- Toss with the mint leaves and serve immediately.
INGREDIENTS
- 3 small onions
- 1 fresh red chilli
- 1 tablespoon Cooking oil
- 4 curry leaves
- ¼ teaspoon onion seeds
- 175 grams frozen corn
- ½ small cauliflower, separated into florets
- 3-7 mint leaves
