BROCCOLI WITH CUMIN AND GINGER

Preparation Method :
- Heat the oil in a heavy-based saucepan over a medium heat and add the cumin seeds and the garlic. Fry for about 20-30 seconds or until lightly browned.
- Remove from heat then add the broccoli and adjust seasoning with salt. Return to the heat and stir-fry for about 2-3 minutes.
- Add 2 cups of water and the ground spice. Cook for a further 5 minutes or until the broccoli is tender. Mix in the chillies and cook for a further minute.
- Serve with Lamb Rogan Josh and Cucumber and Tomato Raita.

- 50 ml Cooking oil
- ½ teaspoon cumin seeds
- 1 small garlic clove, crushed
- 1 head of broccoli, cut into florets
- ½ teaspoon ginger paste
- 2-3 red chillies, halved and deseeded
- Salt, to taste
