Preparation Method :
- Put the chopped onion with the cumin and coriander, sesame seeds, chilli powder, garlic, turmeric and salt and spice mixture into a food processor and process until you have a rough paste.
- In a wok or large pan, heat the oil over a medium heat and fry the spice paste for 5 minutes, stirring occasionally.
- Then add in the green beans, tomato, fenugreek and chopped coriander. Stir-fry for about 5 minutes.
- Sprinkle in the lemon juice and serve.
INGREDIENTS
- 250 grams green beans, blanched
- 1 bunch fresh fenugreek leaves, stems discarded
- 1 tomato, quartered
- 1 onion
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon sesame seeds
- 1 teaspoon chilli powder
- ½ teaspoon crushed garlic
- ¼ teaspoon ground turmeric
- Salt to taste
- 50 ml Cooking oil
- 4 tablespoon chopped fresh coriander
- 1 tablespoon lemon juice
