MASALA BEANS WITH FENUGREEK

Preparation Method :

  • Put the chopped onion with the cumin and coriander, sesame seeds, chilli powder, garlic, turmeric and salt and spice mixture into a food processor and process until you have a rough paste.
  • In a wok or large pan, heat the oil over a medium heat and fry the spice paste for 5 minutes, stirring occasionally.
  • Then add in the green beans, tomato, fenugreek and chopped coriander. Stir-fry for about 5 minutes.
  • Sprinkle in the lemon juice and serve.

INGREDIENTS

  • 250 grams green beans, blanched
  • 1 bunch fresh fenugreek leaves, stems discarded
  • 1 tomato, quartered 
  • 1 onion
  • 1 teaspoon ground cumin 
  • 1 teaspoon ground coriander 
  • 1 teaspoon sesame seeds 
  • 1 teaspoon chilli powder 
  • ½ teaspoon crushed garlic 
  • ¼ teaspoon ground turmeric 
  • Salt to taste
  • 50 ml Cooking oil
  • 4 tablespoon chopped fresh coriander 
  • 1 tablespoon lemon juice
