LOBIA AUR SAAG

Preparation Method :

  • Wash the spinach thoroughly, chop very finely and simmer in a lightly salted water until soft. Drain well, place in a bowl and set aside.
  • Boil the black-eyed beans for about half an hour until soft and set aside.
  • Fry the onions in the oil in a heavy-based saucepan.
  • Combine the spices, garlic and salt with the tomato puree to make a thick paste.
  • Pour this paste over the onions and stir-fry for about a minute.
  • Now add the spinach and fresh coriander, and stir-fry for about 5-7 minutes until most of the liquid has evaporated.
  • Add the black-eyed beans, mix well, lower the heat, cover and cook for 5 minutes. Serve hot.

INGREDIENTS

  • 350 grams fresh spinach 
  • 100 grams black-eyed beans 
  • 2 medium onions, peeled and chopped 
  • 75 ml Cooking oil
  • ½ teaspoon ground cumin
  • ½ teaspoon ground coriander 
  • 1 tablespoon tomato puree
  • 1 teaspoon chilli powder 
  • 1 teaspoon crushed garlic 
  • 1 teaspoon salt
  • 2 tablespoons chopped fresh coriander
