Preparation Method :
- Wash the spinach thoroughly, chop very finely and simmer in a lightly salted water until soft. Drain well, place in a bowl and set aside.
- Boil the black-eyed beans for about half an hour until soft and set aside.
- Fry the onions in the oil in a heavy-based saucepan.
- Combine the spices, garlic and salt with the tomato puree to make a thick paste.
- Pour this paste over the onions and stir-fry for about a minute.
- Now add the spinach and fresh coriander, and stir-fry for about 5-7 minutes until most of the liquid has evaporated.
- Add the black-eyed beans, mix well, lower the heat, cover and cook for 5 minutes. Serve hot.

- 350 grams fresh spinach
- 100 grams black-eyed beans
- 2 medium onions, peeled and chopped
- 75 ml Cooking oil
- ½ teaspoon ground cumin
- ½ teaspoon ground coriander
- 1 tablespoon tomato puree
- 1 teaspoon chilli powder
- 1 teaspoon crushed garlic
- 1 teaspoon salt
- 2 tablespoons chopped fresh coriander
