Preparation Method :
- Heat the oil in a pan. Add the onions and fry until golden brown.
- Add the spice mixture and stir-fry for about 3-5 minutes.
- Pour the water into the pan, cover and cook until all of the water has evaporated completely.
- Add the boiled black-eye beans, green chillies and coriander leaves, stir well. Stir-fry the bean mixture for about 5 minutes.
- Transfer the black-eye beans to a serving dish and sprinkle over the lemon juice. Serve warm.
INGREDIENTS
- 150 grams black-eye beans, rinsed, soaked, cooked and drained
- 150 ml water
- 100 grams medium onions, sliced
- 2 tablespoon Cooking oil
- 2-3 green chillies
- Fresh coriander leaves
- 1 tablespoon lemon juice
Spice Mixture
- 1 inch fresh ginger root, finely chopped
- 4-6 fresh garlic cloves, crushed
- Salt and chilli powder, to taste
- A pinch of turmeric
- 2 teaspoon ground coriander
- 2 teaspoon ground cumin
