BEANS WITH COCONUT

Preparation Method :
- Melt ghee in large frying pan, add seeds; stir for about 2-3 minutes or until seeds begin to pop.
- Stir in the mung beans with onion and ginger; stir over medium heat for about 2 minutes or until onion is soft.
- Stir in cayenne, beans, capsicum and the water; stir over medium heat for about 5-7 minutes or until beans are tender but firm to bite.
- Stir in the lemon juice for about a minute. Sprinkle with coconut and serve.

- 500 grams green beans
- 2 red capsicum, sliced
- 100 ml water
- 50 grams ghee
- 1 teaspoon black mustard seeds
- 25 grams peeled split mung beans
- 75 grams brown onion, chopped
- 1 teaspoon finely chopped fresh ginger
- ½ teaspoon cayenne pepper
- 1 tablespoon lemon juice
- Salt, to taste
- 50 grams desiccated coconut
