SPICY AUBERGINE

Serves :
6

Preparation Time :
15 minutes

Cooking Time :
20 minutes

Preparation Method :

  • Wash the aubergine and wipe dry. Chop into 1 ½ " cubes. Do not soak in water or wash after cutting.
  • Heat the oil in a pan; saute the garlic and green chillies for 30 seconds. Add the ground spice paste and saute for 2 minutes.
  • Add the aubergine and mix well. Add the sugar, salt, and vinegar. Stir well. Cover the pan with a deep metal lid. Pour a little water on the lid and cook on low heat till soft. Taste and adjust seasoning. Remove from heat.
  • Serve hot as an accompaniment to rice and curry.

INGREDIENTS

  • 400 grams Aubergine (baingan), large, seedless

Grind to a smooth paste with 5 tablespoons vinegar:

  • 6 Kashmiri chillies
  • 1 teaspoon Mustard seeds
  • 1 teaspoon Cumin seeds
  • ¼ teaspoon Turmeric powder
  • 6 cloves Garlic minced
  • 2 teaspoon Ginger minced
  • 50 ml IDHAYAM sesame oil
  • 6 cloves Garlic chopped
  • 1-2 Green chillies, chopped
  • 2 teaspoon Granulated sugar
  • 2 teaspoon Salt
  • 50 ml Vinegar
