Preparation Method :
- Heat a little oil in a frying pan and fry the aubergines until the skins just turn crisp and brown. Remove and drain on kitchen paper.
- Fry the onions and mustard seeds in the hot ghee in a large pan until brown, then add the ground coriander and green chilli and fry for 5 minutes.
- Add the chilli powder, coconut, garlic, turmeric and garam masala and fry for 3 minutes further.
- Mix the tamarind juice with the sugar. Stir well and add the aubergines. Cover and cook for 10-12 minutes or until the aubergines are tender, stirring occasionally.
- Fry the bay leaves in a little hot oil for a few seconds and pour over the aubergines just before serving.

- 750 grams aubergines, cut lengthways into quarters
- 150 ml tamarind juice
- 150 grams onions, sliced
- 1 teaspoon mustard seeds
- 100 grams ghee
- 2 teaspoons ground coriander
- 1 fresh green chilli, deseeded and chopped
- 2 tablespoon desiccated coconut
- 3-4 garlic cloves, chopped
- 1 teaspoon turmeric
- 1 teaspoon garam masala
- ½ teaspoon sugar
- Cooking oil, for shallow-frying
- 3 bay leaves
- Chilli powder and salt, to taste
