FRIED EGGPLANTS WITH ONIONS

Serves :
4

Preparation Time :
20 minutes

Cooking Time :
20 minutes

Preparation Method :

  • Heat peanut oil in a medium saucepan, add onion and mustard seeds; stir for about 3-5 minutes or until seeds begin to pop and onions turn soft.
  • Stir in sesame seeds; stir over medium heat for about a minute or until seeds are golden.
  • Stir in the raisins with the nuts, chilli, turmeric, flour and sugar; stir over medium heat for 1-2 minutes.
  • Stir in the lemon juice with yogurt and coconut milk, bring to boil; reduce heat, simmer to low flame for 3-5 minutes. Serve onion mixture with eggplants.

INGREDIENTS

  • 900 grams large eggplants, thinly sliced, deep fried, drained and keep warm
  • Cooking Oil for deep-frying
  • 2 tablespoons peanut oil
  • 350 grams brown onions, sliced
  • 2 tablespoons lemon juice
  • 100 grams plain yogurt
  • 2 tablespoon coconut milk
  • 1 teaspoon yellow mustard seeds
  • 1 teaspoon black mustard seeds
  • 2 tablespoons sesame seeds
  • 1 teaspoon chili powder
  • ½ teaspoon ground turmeric
  • 1 tablespoon besan flour
  • 1 teaspoons sugar
  • 50 grams golden raisins
  • Salt, to taste
  • 50 grams chopped salted roasted cashews
