BAINGUN AUR PYAAZ KI BHUJIA

Preparation Method :

  • Prepare the onions and aubergines and mix 1 tablespoon of the fresh coriander with each.
  • Heat the oil with the curry leaves and whole spices. When the oil is hot add the finely chopped onions, and fry until soft and golden brown.
  • Add the remaining fresh coriander, salt and the finely chopped aubergines. Lower the heat and gently fry at least for 10 minutes or until the aubergines are tender.
  • Sprinkle in the lemon juice, lower the heat and simmer for 3 minutes.

INGREDIENTS

  • 2 medium onions, peeled and finely chopped 
  • 250 grams aubergine, finely chopped 
  • 5 tablespoons chopped fresh coriander
  • 60 ml Cooking Oil
  • 3 curry leaves, fresh or dried 
  • ½ teaspoon onion / mustard / fenugreek seeds 
  • 1 teaspoon salt 
  • 1 tablespoon lemon juice
