WATERMELON CURRY

Preparation Method :
- Remove red part. Keep aside. Peel green skin to obtain white flesh of watermelon. Cut the flesh into 1" pieces. Puree the red part and strain.
- Heat 2 tablespoon ghee. Add cumin seeds.
- When cumin seeds turns brown, add chopped green chillies. Stir. Add white part of watermelon and bhuno for 4-5 minutes till golden patches appear.
- Cover and cook for 2-3 minutes till soft. Add cumin powder, sugar and salt. Mix for a minute.
- Add red watermelon puree. Boil. Remove from heat.
- Add coriander leaves if using. Mix well and serve hot.

- 250 grams white flesh of watermelon, cut into 1" pieces
- 800 grams chopped red part of water melon - pureed
- 2 tablespoon ghee
- 5 green chillies-chopped
- ¾ teaspoon cumin seeds
- 1 teaspoon cumin powder
- 1 teaspoon salt
- 1 teaspoon sugar
- Some chopped coriander leaves
