VEGETABLE KOFTA

Preparation Method :

  • Knead all the ingredients of the Kofta to form stiff dough.
  • Make small balls and deep fry till golden brown.
  • Heat a pan and add red chillies and coriander seeds and dry roast for 30 seconds.
  • Cool and grind in a mixer to a fine powder and keep aside.
  • Heat oil in a pan. Fry onions, garlic, and green chillies on low flame for a few minutes.
  • Add the prepared powder and sauté on low flame for few seconds.
  • Then add tomatoes and mix well. Cook for 10-12 minutes on medium flame by stirring continuously till the oil separates.
  • Mash the mixture a little; add tomato puree, dried fenugreek leaves, Garam masala, salt and little water and cook for 5 minutes with a closed lid.
  • Add koftas and cook for another 2-3 minutes.
  • Garnish with coriander leaves and serve hot.

INGREDIENTS

For Kofta:

  • 200 grams Grated bottle gourd
  • 100 grams Gram flour
  • 1 tablespoon Wheat flour
  • 2 Chopped green chilies
  • 1 Chopped onion
  • 1-inch piece Grated ginger
  • IDHAYAM MANTRA Peanut Oil for deep frying
  • Salt to taste

For Gravy:

  • 1 Chopped onion
  • 2 Finely chopped tomatoes
  • 1 tablespoon Tomato puree
  • 1 tablespoon Coriander seeds
  • 4 Whole red chilies
  • 2 teaspoons finely chopped garlic
  • 1 teaspoon finely chopped green chilies
  • 1 teaspoon Dried fenugreek leaves
  • 1 teaspoon Garam masala
  • Chopped coriander leaves for garnishing               
  • IDHAYAM Sesame Oil for cooking
  • Salt to taste
