VEGETABLE KOFTA

Preparation Method :
- Knead all the ingredients of the Kofta to form stiff dough.
- Make small balls and deep fry till golden brown.
- Heat a pan and add red chillies and coriander seeds and dry roast for 30 seconds.
- Cool and grind in a mixer to a fine powder and keep aside.
- Heat oil in a pan. Fry onions, garlic, and green chillies on low flame for a few minutes.
- Add the prepared powder and sauté on low flame for few seconds.
- Then add tomatoes and mix well. Cook for 10-12 minutes on medium flame by stirring continuously till the oil separates.
- Mash the mixture a little; add tomato puree, dried fenugreek leaves, Garam masala, salt and little water and cook for 5 minutes with a closed lid.
- Add koftas and cook for another 2-3 minutes.
- Garnish with coriander leaves and serve hot.
INGREDIENTS
For Kofta:
- 200 grams Grated bottle gourd
- 100 grams Gram flour
- 1 tablespoon Wheat flour
- 2 Chopped green chilies
- 1 Chopped onion
- 1-inch piece Grated ginger
- IDHAYAM MANTRA Peanut Oil for deep frying
- Salt to taste
For Gravy:
- 1 Chopped onion
- 2 Finely chopped tomatoes
- 1 tablespoon Tomato puree
- 1 tablespoon Coriander seeds
- 4 Whole red chilies
- 2 teaspoons finely chopped garlic
- 1 teaspoon finely chopped green chilies
- 1 teaspoon Dried fenugreek leaves
- 1 teaspoon Garam masala
- Chopped coriander leaves for garnishing
- IDHAYAM Sesame Oil for cooking
- Salt to taste
