Preparation Method :
- Heat the vegetable oil in a wok or large pan over a medium heat and add the mustard seeds. As it pops, add the cumin seeds, then the onion seeds.
- Add the ginger and chillies and stir-fry the spices briskly for about half a minute or until they release their flavours.
- Add the pineapple, raisins, sugar and salt with 1 - 1½ cups of the reserved juice.
- Bring the mixture to boil, simmer to low flame and cook, uncovered, for about 20 minutes.
INGREDIENTS
- 750 grams pineapple rings or chunks in natural juice, Drained and reserve the juice, chopped finely.
- 100 grams granulated sugar
- 2 tablespoon Cooking oil
- ½ teaspoon black mustard seeds
- 2 teaspoon grated fresh root ginger
- ½ teaspoon cumin seeds
- 1 teaspoon crushed dried chillies
- ½ teaspoon onion seeds
- 50 grams seedless raisins
- Salt, to taste
