SPINACH AND POTATO CURRY

25 minutes

Preparation Method :

  • Heat the oil in a large heavy pan and fry the mustard seeds for 2 minutes or until they splutter.
  • Add the sliced onion, garlic and chopped ginger to the mustard seeds and fry for 5 minutes, stirring.
  • Wash and trim the spinach, then 1 blanch it in a pan of boiling water for about 5 minutes.
  • Drain the spinach thoroughly and squeeze the excess liquid. Set it aside.
  • Add the potato chunks, chili powder, salt and water and stir fry for 5 minutes.
  • Add the drained spinach. Cover the pan with a lid and simmer for at least 10 minutes or until the potatoes are tender. Serve hot.

INGREDIENTS

  • 420 grams spinach
  • 1 tablespoon Cooking oil
  • 1 teaspoon black mustard seeds
  • 1 onion, thinly sliced
  • 2 garlic cloves, crushed
  • 1 in piece fresh root ginger, finely chopped
  • 750 grams potatoes, cut into small chunks
  • 1 teaspoon chili powder
  • Salt to taste
  • 150 ml water
